Tumbet, a Mallorcan delicacy
One of the most special features of this dish is that tumbet is made with seasonal ingredients. This makes the recipe very healthy. The dish dates back to the 16th century, with the incorporation of potatoes and tomatoes into Spanish gastronomy brought from the so-called “New World”. Pere d’Alcantara’s recipe book “la cuina mallorquina” shows that tumbet once consisted only of potatoes, garlic, tomato, peppers and boiled meat. Ingredients such as courgette and aubergines have been added to tumbet in the last century.
