Ensaimada de Mallorca

Flour, sugar, eggs, sourdough and lard. These are the ingredients of the most popular Mallorcan recipe, a sweet with a long tradition whose first written references date back to the 17th century. The ensaimada, a ‘Protected Geographical Indication’ product under the names ‘Ensaimada de Mallorca’ or ‘Ensaimada de Mallorca de cabello de ángel’, can be filled with or accompanied by different ingredients: cream, tallades, cream, chocolate… although the most popular are the plain (without any filling) or the ‘Ensaimada de cabello de ángel’.
